Butter Ball Dumplings – 12 Days of Blissmas Cookies Day 9

Powdered-sugar-coated balls of butter and nuts . Need I say more? They’re THE easiest and fastest cookie to make during the holidays and I’ve never heard of anyone not loving the heck out of these little guys. They’re so easy and fun, your kids could even make these to help earn their keep around there. Pair them (the cookies – not the kids) with a giant glass of milk and you’ve got yourself a very happy Santa.
Yield: 4 dozen
Ingredients:
- 1 C Butter, room temperature
- 1/2 C Powdered Sugar (Confectioner’s Sugar) + some for rolling
- 1 tsp Vanilla extract
- 2 1/3 C Sifted Flour (the sifted part is actually important in this recipe)
- 1 C Pecans, finely chopped
- With a mixer, cream butter, powdered sugar and vanilla until smooth.
- Mix sifted flour and nuts in.
- Chill until firm (or until you can’t wait any longer).
- Roll into 1″ balls & set as close together as you’d like (they don’t spread) on ungreased cookie sheet
- Bake at 400 degrees for 10-12 minutes, until barely golden colored
- Roll gently in powdered sugar while warm, then repeat once cool
