I am addicted to peanut butter and these delicious, rich chocolate peanut butter cookies are (by far!) one of my favorites ever. Yum!
- 1 1/2 cups creamy peanut butter
- 1 stick butter, room temperature
- 2 1/2 cups confectionery sugar (more or less)
- melting chocolate (I prefer chocolate almond bark)
Directions:
1) Mix the peanut butter, butter and sugar together. Use your hands if needed because it’s very thick. Dough should be nice and stiff (not crumbly or sticky though.)
2) Roll the dough into 1″ balls and set them on a cookie sheet covered with wax paper.
3) Store in freezer until firm.
4) Melt chocolate in microwave (I melt in 30 second intervals until smooth and runny. Stir often.)
5) Work with about 10-20 peanut butter balls at a time so that they remain firm.
6) Using a toothpick, dip them into the melted chocolate. Leave a bit of the peanut butter showing at the top.
7) Place back in freezer until chocolate is set. Store in fridge or freezer.

Buckeyes are my favorite candy! I can’t make them though, I just eat every single one myself.
Yum! I make a similar version, but I roll rice krispies and chopped walnuts in with the peanut butter mixture. Creamy AND crunchy.
They are my favorite too Karly…I don’t make them as often as I’d like because I know I’d eat them all before the kids got home from school.
And Sarah – your additions sound so yummy. I’ll have to try that sometime!
