I love shrimp. It’s one of my family’s favorite foods. Shrimp is very easy to cook but I think many people shy away from trying it. It only takes minutes to cook so when you are trying to get a meal on the quickly, shrimp is a good choice. Cook as your recipe states, just until the shrimp turn pink (some turn an orange color instead of pink). If you cook it this way, you will always have delicious shrimp.
Shrimp scampi can be served on pasta or rice so use whatever starch you like. I like to serve it with rice and green peas. Scampi is a great meal to serve if you are trying to impress.
Easy & Impressive Shrimp Scampi
Makes 4 servings
1 pound large fresh shrimp
3 large cloves garlic, minced
1/4 cup olive oil
1/2 cup unsalted butter
1/4 cup dry white wine
1/4 tsp. dried crushed red pepper
1/4 cup chopped fresh parsley or you can use dried
1. Peel shrimp and de-vein.
2. In a large skillet, saute minced garlic in hot oil for 1 to 2 minutes. Add the butter and stir until it melts. Add the shrimp and cook for 1 minute.
3. Stir in wine and red pepper; reduce heat, and simmer 1 to 2 minutes or until the shrimp turns pink.
4. Sprinkle with the fresh parsley and serve over your choice of rice or pasta.

My husband bought an absurd amount of shrimp so I’m trying this recipe tonight. Looks easy enough to make while the twins weave around my legs!
