As you stroll the produce section of your local grocery store or farmers market, you have probably noticed the rainbow of colors that are coming to life. The warmer temps have brought a new selection of veggies and have me craving for the cool crispness, which only comes with the simplicity of a great spring salad.
These are great recipes to calm that craving and help you get a fresh start to your next bbq or family dinner.
My Favorite:
Strawberry Spinach Salad w/ Sweet Vinaigrette Dressing
- 1 bag baby spinach
- 1-2 C. strawberries, quartered
- 1/2 C. feta cheese crumbles
- Toss all ingredients together
- Optional: mandarin oranges, blueberries, craisins, or sliced almonds
Sweet Vinaigrette Dressing
- 3/4c. Vegetable oil
- 4 Tbs. Sugar
- 6 Tbs. Cider Vinegar
- Place all dressing ingredients in an air tight container, and shake vigourously.
- Pour over salad and toss together
