Spring is here and what better way to celebrate spring than with these excellent muffins? Exactly my point. For an interesting twist, add or substitute a teaspoon of orange extract to the recipe.
These are your usual, mix the wet, mix the dry, mix the two, add the fruit muffins. Just preheat the oven to 350 before you get started and for best results let your eggs come to room temperature before baking.
Strawberry Muffin Recipe Ingredients
- 1/2 cup butter (reduce the salt if you don’t have any unsalted handy)
- 3/4 cup brown sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract (the real stuff. none of that imitation)
- 1 teaspoon orange extract (optional)
- 2 large, very ripe bananas (If they don’t have freckles, mash about twenty minutes before using, the oxidation will improve the flavor, but not the color)
- 1 cup strawberries, hulled and cut into bite size pieces
- 2 1/4 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Strawberry Muffin Recipe Instructions
In a medium bowl, combine the butter, brown sugar, eggs, and extract.
In another bowl combine the flour, baking powder, baking soda, and salt. Toss the strawberries with some of the flour mixture and set aside.
Stir the bananas into the wet mixture, then add the dry and stir until just combined. Stir in the strawberries and immediately spoon into a greased or paper lined muffin tin.
Bake at 350F for 20 – 25 minutes and cool on a wire rack.
Yield: 12 muffins

Wow, Heather, is this your personal recipe? It looks positively delicious! I can almost taste it and can definitely feel the textures just from the photo here. It’s strange, because I can’t actually recall having ever had a strawberry muffin before. I’m sure I must have, as it doesn’t seem all that revolutionary, but I can’t actually say that I remember doing so. Maybe it’s the idea of having actual bite-sized chunks of fruit in a muffin that’s making it all seem so new. At any rate, I’ll absolutely be trying this recipe out. Thank you so much!
