YAY! It’s the first recipe of Egg Month! Are you as excited as I am? The recipe that I’m sharing today is one of my favorite quick and easy breakfasts. It’s called: The BEST breakfast sandwich: Bacon Egg Spinach and Tomato breakfast sandwich. I know, I’m sooo clever.
This sandwich is one of my favorite quick, go to meals in the morning, it’s healthy and delicious and I can eat it while chasing down a 2 year old or monitoring a 5 year old who’s brushing her teeth or I can eat it with one hand while sitting at my computer, blogging or checking up on my favorite reads. For me, a busy mom, it is the perfect breakfast meal.
I get fiber and tons of nutrients from the spinach. Choline, energy and a memory boost from the egg, lycopene, iron and vitamins from the tomatoes and then from the bacon, well, from the bacon I get that delicious crunch and that tiny bit of grease that every southern gal needs to keep her going.
Yes, this sandwich packs a wollop of health benefits, but in my opinion the health benefits are just a bonus, the taste of this sandwich is the true reason it’s the BEST breakfast sandwich. The cold tangy burst from the tomatoes, the crispy crunch of the bacon and the dark leafy goodness of the spinach combined with the burst of chewy goodness from the seasoned egg, all on some nice crisp whole wheat toast. YUM.
BEST Sandwich
- 2 slices whole wheat bread, toasted
- 1 egg, cooked and seasoned with garlic salt, pepper and a dash of red pepper
- Handful of raw spinach leaves
- 3 slices crispy cooked bacon
- Tomato slices
One of the great things about this sandwich is that it can be assembled in any order that pleases you, I like for the first burst of flavor that I get to be tomatoes so those are on top for me, next is bacon, egg and then spinach.

I LOVE this combo!! I use PAM to fry the egg to just over easy and then when I crunch the bread, the yolk soaks into everything. Hello Heaven! And great job so far!!

I think I’m gonna have to buy some spinach and tomatoes so we can make some of these this weekend. It looks yummy!

Déjà vu! Boy did I just have a flashback!!
Back in my “younger days” when I used to work at a downtown law firm, and just so happen to well, let’s just say have a VERY late night out the night before, I would stroll over to the little drugstore next door, belly up to the grill and order almost this exact sandwich! In my case it would be a fried egg with bacon, lettuce, tomato and mayonnaise on toasted white bread. I don’t know what it was about that sandwich, but I always instantly felt “normal” again, get over that “night before,” and get on with my busy day of dealing with legal business. I guess it was my own hangover cure LOL. Thanks for the memories!!
