Zucchini, Garlic, Pasta and Parmesan
That’s it, that’s all you need for this quick, delicious, simple pasta.
Zucchini-Garlic Pasta
- 2 to 3 Medium to Large Zucchini
- 1 head garlic
- 1 lb angel hair pasta, I recommend Barilla Pasta Plus
- Parmesan Cheese
- Shred zucchini and mince garlic.
- Prepare pasta as directed on box. While cooking the pasta Sauté garlic in Olive Oil for a minute or two. Add the zucchini and sauté 10 to 15 minutes longer.
- Add the cooked pasta and the shredded cheese and mix well. Salt and pepper to taste. (we grate the cheese and use probably use about 1 cup or more) not packed)

This is my DH’s go-to recipe when we have no food in the house and I don’t want to cook.
I CANNOT WAIT TO MAKE THIS!!!!!! Healthier-ish pasta, still with cheese? nommmmm!
I made this tonight! Delish! Here were the things I would change:
-More zucchini, less pasta. We halved the recipe and used 2 small/medium zucchinis. I’d use 2 huge ones or 3 medium ones. I measured 1/2 pound angel hair by weight- maybe the recipe calls for post-cooking weight? Next time I’ll try 1/3 pound.
-I added bacon- YUM! We like protein in our meals and the bacon was a great salty contrast
-I’d pre-grate the cheese!
