Strawberry vanilla tiramisu

The other day I was talking to some French friends about the famous Italian dessert Tiramisu when I realised that none of them knew that Tiramisu means “cheer me up” in Italian. I think it’s probably the most genius dessert name anyone as ever come up with and pretty much summarise the meaning of all desserts in general.  Although I have never been that much of a fan of Tiramisu when I was younger I am starting to experiment more with recipes and  I have learnt to enjoy this classic. This spring version is super quick and easy to make and a perfect dessert for a tea party or a dinner. It’s colourful and fresh and it will surely cheer your mum up if her Mother’s Day in anything but perfect!

Strawberry vanilla tiramisu

Recipe

Cream:

  • 3 large egg yolks (at room temperature)
  • 3 tbsp. sugar
  • 1 vanilla bean
  • 1 ½ heavy cream
  • 2 tbsp. icing sugar

Strawberries :

  • 20 strawberries
  • Juice of ½ a lemon
  • 2 tbsp. sugar
  • 10 Savoia di biscuits (lady’s fingers)
  • 4 tbsp marsala

Instructions

  1. Cut the strawberries into quarters and place them in a small bowl
  2. Add the lemon juice and sugar, cover in plastic film and refrigerate
  3. In the bowl of a stand mixer whip the egg yolks with the white sugar and vanilla for 4 minutes or until pale and airy
  4. Add the mascarpone and whisk until smooth
  5. In a separate bowl whip the cream and icing sugar to stiff peaks
  6. Gradually and gently incorporate the cream into the egg mixture with a rubber spatula
  7. Refrigerate

Assembling

  1. Drain the strawberries and reserve the liquid. Set the strawberries aside and add the marsale to the liquid
  2. Layer the biscuits in a shallow dish, pour over the liquid and let them soak for 30 minutes
  3. Prepare 5 to 6 glasses depending on the size
  4. Layer the soaked biscuits (you might need to cut them in stripes to make them fit), strawberries and biscuits and top with more strawberries
  5. Refrigerate until ready to serve
