Simple Shrimp Salad

The weather is warming up now that Spring is officially here, and we have been celebrating by taking our meals outdoors.  We have already fired up the grill three times in the past week.  We like to mix it up though and have cooked burgers, chicken, and shrimp so far.

Here is the recipe for the quick and easy Shrimp Salad that I whipped up for dinner one night.  The best part is that you can cook the orzo salad ahead of time and then grill the shrimp right before serving.


  • 1 bag Shrimp (large, fully cooked)
  • 1 box Orzo
  • 1 jar Pesto
  • 1 small bag of Pine Nuts
  • 1 can Pineapple (diced)
  • 1/2 cup Sweet Chili Sauce
  • Salad greens

Combine the defrosted shrimp with the sweet chili sauce in a shallow dish.  Cover and refrigerate until ready to grill.

Note: I defrosted the shrimp in the refrigerator overnight, rinsed, then about 2 hours before grilling I added the sweet chili sauce, and popped the dish back into the refrigerator until we were ready.

Prepare the orzo according to the package directions.  Drain and rinse under cold water once cooked, and toss in the pesto.  Combine and set aside to cool.  The oil in the pesto will prevent the orzo from sticking together once cooled.  Add the drained pineapple pieces and pine nuts before serving.

Grill the shrimp and serve warm with the orzo and a side of salad.

For picky eaters like my daughter, who does not eat shrimp, I served the shrimp and orzo in separate dishes on the table so that each person could help themselves.
