In my neck of the woods it is heart of peach season with the apples starting to make their appearance (eating regional produce is not only good for the local economy, it also reduces your carbon footprint).
For me this time of year means Apple Peach Oatmeal Crunch:
Ingredients:
2 cups cooking apples and 2 cups peaches (or 4 cups just apples or just peaches)
3/4 cup sugar
2 Tablespoons flour
½ cup packed brown sugar
½ cup flour
½ cup butter
2/3 cup rolled oats
1 tablespoon cinnamon
Pre-heat the oven to 300 degrees
Butter a 9-inch baking dish.
Peel, core, and slice the apples and the peaches. Slice thickness does not matter nor does ripeness.
Place sliced fruit, sugar, and 2 tablespoons of flour into the buttered baking dish.
In a separate bowl mix the brown sugar and ½ cup of flour together.
Cut in the butter.
Stir in the oats and cinnamon.
Spoon this mixture over the fruit and ensure all the fruit is equally covered with the mixture.
Bake for 1 hour.
Serve warm with ice cream, whip cream, or by itself.
