(Yields 2 servings)
Ingredients:
- 2 chicken breasts, boneless, skinless and butterflied
- 2 slices prosciutto ham
- 2 slices Fontina cheese ( I couldn’t find Fontina so I used Mozzarella)
- 2 Tbsp. fresh basil, chopped
- 4 Tbsp. butter, divided
- 6 mushrooms, sliced
- 1 small onion, chopped
- 1/2 cup fresh garlic chopped
- 1/2 cup white wine (remember, don’t use wine you wouldn’t drink)
- 1/2 cup fresh lemon juice
- White pepper to taste
- Kosher salt to taste
Instructions:
- Cover one-half of each breast section with one slice of prosciutto ham, one slice of Fontina cheese. Fold chicken breast half flap over the dressed chicken breast half; season with grill seasoning.Grill and baste until cooked.
- In a sauté pan place 1 Tbsp. butter, sauté mushrooms and onions and garlic until softened. Add white wine and lemon juice; simmer approximately 10 minutes on medium-low heat to reduce.
- A little at a time, add remaining 3 Tbsp. butter until butter melts and mixture emulsifies, add basil. Place lemon butter mushroom basil sauce on top of the Rosa. Serve with pasta (I recommend Barilla Pasta Plus, in the yellow box. Thin spaghetti)
This dish is absolutely deliciously amazing and savory and just… wow.
I made it for Nathan’s birthday last week and it was an immediate hit with both of us. The flavor profile is outstanding, subtle, savory and not heavy. It was actually very simple to prepare yet tasted like a gourmet meal that I’d slaved over for hours.

The first Valentine’s Day my husband and I were dating he gave me a gold heart bracelet. It was the first piece of jewlery I ever received from a guy. I loved it then and I love it even more now!

My favorite Valentine’s memory would have to be sitting at the table with my kids, with piles of paper and doilies and glitter, making cards.
Our first Valentines Day as a married couple my Husband made me a Beautiful Valentine’s Day quilt! (His Mom did help, but it was his idea.) It was very thoughtful and romantic. We snuggle with it all of the time.

My favorite Valentine’s memory would be the first one with my husband (the first while we were dating). He planned the day out and picked me up for a day of fun surprises. He’d bought me some film for my new camera and gave it to me when he drove us to hike a really beautiful trail. We had a blast hiking around and taking pictures that we got developed later that night! So fun!!

Oh, that’s an easy one! My favorite Valentine’s memory is from two years ago when I became an aunt for the first time when my sweet nephew was born on Valentine’s Day. It was a wonderful day and love was definitely in the air.
