This blog post has been sponsored by Bob’s Red Mill, but all opinions are my own, and this recipe is kid-tested and approved so give it a try. Gluten-Free Banana Chocolate Chip Muffins are sure to make them smile. I have a gluten-free child. He doesn't have Celiac disease, his body just cannot process gluten. The transition from regular flours, breads, and treats has been a long and sometimes difficult one for not only him, but my other children too with me often having to make two separate dishes. He misses certain foods, and finds the taste of some gluten-free foods unappealing. Chickpea vegetarian burgers

I think that burgers are one of the most satisfying foods on earth, even when they are not made out of meat and can be called healthy. My favourite thing about vegetarian burgers is the extra add-ins, and this recipe surely doesn't miss any: grilled cheese, guacamole and caramelized onions (of course any extra would just make these burgers even more delicious). I would have liked to use a heartier bread, but I couldn't find any at my local shop this morning! I think that any wholesome home-made or store bought bread would pair very well with the chickpeas. The burgers themselves taste like falafel and can be flavoured with any spice mix and seasonal greens. These burgers are perfect for a spring/summer weeknight dinner or for a vegetarian option at a barbecue along with some roasted sweet … [Read more...]

Chestnut, chocolate & pears cookies

Being Italian, eating chestnuts during the holidays is a must, whether it’s roasted chestnuts that I picked up in the woods with my family, chestnut paste on toast or chestnut flour in baked goods, I think that nutty sweet flavour just makes every food taste cosier!  The combination of chocolate chip cookie (i.e. one of the cosiest food in the world) and chestnut taste absolutely awesome! Brown butter and pear just make everything more nutty and flavourful! Chestnut flour is naturally sweet so these cookies contain less sugar than most chocolate chip cookies, pears also keeps them chewy on the inside while the outside is nice and crispy. Inspired from the Top With Cinnamon Cookbook Recipe (makes 15 cookies) Ingredients 5 oz butter 1 cup chestnut flour ¾ cup + 2 … [Read more...]
