Strawberry Vanilla Tiramisu

The other day I was talking to some French friends about the famous Italian dessert Tiramisu when I realised that none of them knew that Tiramisu means "cheer me up" in Italian. I think it's probably the most genius dessert name anyone as ever come up with and pretty much summarise the meaning of all desserts in general.  Although I have never been that much of a fan of Tiramisu when I was younger I am starting to experiment more with recipes and  I have learnt to enjoy this classic. This spring version is super quick and easy to make and a perfect dessert for a tea party or a dinner. It’s colourful and fresh and it will surely cheer your mum up if her Mother's Day in anything but perfect! Recipe Cream: 3 large egg yolks (at room temperature) 3 tbsp. sugar 1 … [Read more...]

Cacio e pepe linguine with white asparagus

As the weather is getting warmer and sunny afternoons are followed by long evenings on the porch chatting with friends I feel less and less motivated to spend time in the kitchen and cook elaborate meals. This recipe is for one of those evenings: when you can finally say "Ah summer is coming" and all you want is a simple, delicious dinner that can be put together in less than 15 minutes.   Recipe Ingredients 14 oz dry linguine (or fresh pasta of your choice) 1 bunch white asparagus 2 cups coarsely grated cheese (ideally ¾ of a cup parmesan and 1 ¼ roman pecorino) Pepper to taste 4 tbsp olive oil a handful of slivered almonds Instructions Bring one large pot of salted water to a boil In the meantime trim the ends of the asparagus, then peel the stems … [Read more...]

Chickpea vegetarian burgers

I think that burgers are one of the most satisfying foods on earth, even when they are not made out of meat and can be called healthy. My favourite thing about vegetarian burgers is the extra add-ins, and this recipe surely doesn't miss any: grilled cheese, guacamole and caramelized onions (of course any extra would just make these burgers even more delicious). I would have liked to use a heartier bread, but I couldn't find any at my local shop this morning! I think that any wholesome home-made or store bought bread would pair very well with the chickpeas. The burgers themselves taste like falafel and can be flavoured with any spice mix and seasonal greens. These burgers are perfect for a spring/summer weeknight dinner or for a vegetarian option at a barbecue along with some roasted sweet … [Read more...]

Simple Shrimp Salad

The weather is warming up now that Spring is officially here, and we have been celebrating by taking our meals outdoors.  We have already fired up the grill three times in the past week.  We like to mix it up though and have cooked burgers, chicken, and shrimp so far. Here is the recipe for the quick and easy Shrimp Salad that I whipped up for dinner one night.  The best part is that you can cook the orzo salad ahead of time and then grill the shrimp right before serving. Ingredients: 1 bag Shrimp (large, fully cooked) 1 box Orzo 1 jar Pesto 1 small bag of Pine Nuts 1 can Pineapple (diced) 1/2 cup Sweet Chili Sauce Salad greens [sc:adsense ] Combine the defrosted shrimp with the sweet chili sauce in a shallow dish.  Cover and refrigerate until ready to … [Read more...]
