Gluten-Free Banana Chocolate Chip Muffins Recipe with Bob’s Red Mill

This blog post has been sponsored by Bob’s Red Mill, but all opinions are my own, and this recipe is kid-tested and approved so give it a try. Gluten-Free Banana Chocolate Chip Muffins are sure to make them smile.I have a gluten-free child. He doesn't have Celiac disease, his body just cannot process gluten. The transition from regular flours, breads, and treats has been a long and sometimes difficult one for not only him, but my other children too with me often having to make two separate dishes. He misses certain foods, and finds the taste of some gluten-free foods unappealing. So I'm constantly experimenting in the kitchen trying to come up with recipes that not only he loves, but that my other kids love too.And I've found one that has quickly become a big hit for after … [Read more...]

Vegan Chocolate Mousse

Vegan Chocolate Mousse?  Is that possible? I have been baking for a while now and I think I have tried a few things: I have baked cakes with so many different flours and sugars, I tried EVERY coconut product on the market and I also added funky vegetables to cakes in order to improve texture. And so this vegan chocolate mousse was born. The secret is using good chocolate: sweet potatoes bring creaminess and sweetness, while chickpea water gives some … [Read more...]

This recipe is my go-to snack for revision time: it comes together in five minutes, it's not excessively sweet and only makes enough bites to fuel your brain correctly! You can also double or tripe the recipe if you are not revising/working alone. Add in any extra ingredient you wish to (seeds and nuts are a good idea) and substitute coconut flour with almond/cashew powder to experiment a … [Read more...]

I have to admit that the salad dressing plays a huge role in how much I like a salad – such a good flavor boost.  I don’t typically choose creamy dressings, I have a soft spot for a great vinaigrette.  The two dressing recipes below are my “go to's". The first one leans a bit more toward Greek and the second one is a classic Balsamic.  They are easy to make and I typically keep them about a week in the fridge (if they … [Read more...]
