Here's a recipe that makes a fantastic main course salad but would also be an excellent match as a side salad with grilled meats. This salad is loaded with things that are good for you and its easy to make. Give it a try! I adapted my version from one at EatingBirdFood (and she adapted hers too!) I used a little less water for cooking quinoa and a little less oil to create what you see below. I joined a community garden this year. Growing vegetables and herbs is something I’ve thought about for a long time. But digging up the back yard to create a garden was never high on anyone’s list at my house. In a matter of happenstance, In April I noticed an advertisement in the local paper for a new community garden and knew this would be my chance. “I am SO blessed” said the homeowner, standing on her front steps watching as the crews organized and divided up to tackle the day’s projects. On a beautiful weekend day, I had joined the Charter Our Community team, Charter Communications philanthropic initiative,which provides education, resources and financial support to improve homes in the Charter “footprint.” It’s a chance for their employees and other volunteers to make a difference in their communities.
