When it gets chilly outside and the choice of seasonal fruits at the shops gets smaller and smaller apple cinnamon muffin are a good option for your weekend baking. When I was younger muffins were my favourite thing to bake, so now whenever it’s rainy and gloomy outside I fell like throwing a batch together. These are made with spelt flour, sugar and cinnamon coated apples and not that much sugar and oil, which makes them a yummy option for your new year resolution breakfasts!
Apple cinnamon muffins
Makes 12
For the batter
- Ingredients
- 2 eggs
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 1 cup unsweetened apple sauce
- 1/4 cup canola oil
- 1 cup spelt flour
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsb cinnamon
- 1/4 tsp salt
- 1/2 cup lightly warm milk
Instructions
- Preheat the oven to 350 F(180 C) and fit a muffin tin with paper cups.
- In a medium bowl combine all the dry ingredients.
- In the bowl of stand mixer, beat the eggs and sugar until pale and fluffy, about 3 minutes.
- Add the vanilla, apple sauce and oil and whisk for 10 seconds.
- Using a rubber spatula, delicately and gradually (keep mixing while you add the flour) stir in the dry ingredients.
- Add the warm milk (not hot!!) and mix until combined.
For the apples
Ingredients
- 1 apple
- 2 tbsp light brown or cane sugar
- 1/4 tsp cinnamon
Instructions
- Chop the apple into small cubes (1/2 inch).
- Place the apples, cinnamon and sugar in a medium bowl and stir to cover in cinnamon-sugar.
- Mix half of the apples into the batter and sprinkle 3-4 cubes on top of each muffin
- Bake for 10-15 minutes or until a toothpick inserted in the centre comes out clean.
