Cinco de Mayo is coming up. You know, on the 5th of May. {Can we stop for just a moment to think about that? MAY. It’s right around the corner. 2014, slow down.} Cinco de Mayo is probably one of my most favorite days of the year. It’s a no-excuse-needed-to-eat-yummy-Mexican-food kind of day. It’s also, and more importantly, the day the United States celebrates Mexican heritage and pride. And a day to eat Mexican food. Oh, I said that already. Well, it can stand to be repeated. YUM!
Today, I’ve got a bunch of recipes {and even a few decorating ideas} for you to throw a Fiesta like no other! Read on.
Pineapple Habanero Salsa – Fresh pineapple is one of my very favorite fruits. If you’ve never cut a fresh pineapple, don’t be intimidated. Make this recipe and cut into your first one.
Salad Ole with Avocado Tequila Lime Dressing – Basically, a taco salad but, BETTER!
Tequilla Lime Chicken Fajitas – Fajitas are one of my all-time favorite Mexican foods. Load a tortilla up with meat, cheese, sour cream and sauteed veggies. It doesn’t get much better.
Grilled Fajita Skirt Steak – Which fajitas are your favorite? Chicken or steak?
Enchilada Nachos – Nachos. Need I say more?
Shrimp Tacos with Chipotle Cream – Did you know tacos are the number one Mexican food? And there’s probably hundreds of variations of the taco.
Vegetarian Burrito Bowl – If you’re not a fan of meat dishes or the added calories of the tortilla shell, this burrito bowl is perfect! Avocado, tomatoes, rice, cheese, corn and black beans will satisfy your Mexican craving.
[sc:adsense ]Jalapeno Cilantro Margarita – Wash all of these tasty meals down with a refreshing margarita that has just a hint of spicy heat.
Corona Margarita {aka Beer-rita} – Want a tangy lime and beer fusion? This fun margarita will be a hit at your next Fiesta!
Now that you have the menu planned and all of the recipes needed, you can start decorating. I love Mexican style. It’s full of color and fun!!
Tissue Paper Fiesta Flowers – These flowers are easy to make. Make a bunch to make a bright and bold statement!
Pull Pinata Garland – Children of ALL ages will love that you made these mini pinatas. You could even fill each one to cater to individual tastes.
DIY Fringes Table Runner – The small details are what most guests notice when they attend a party. I promise the effort you put in to this runner will be the talk of the table.
