I have been baking for a while now and I think I have tried a few things: I have baked cakes with so many different flours and sugars, I tried EVERY coconut product on the market and I also added funky vegetables to cakes in order to improve texture. So last week when someone told me that chickpea water (yes that bizarre liquid you discard in your sink when you open a can of chickpeas) can be whipped like egg whites I was amazed. Mini chocolate & coconut mini eclairs

A few years ago I was working in a pastry shop that mainly sold éclairs. There were about a billion different flavours and 3 sizes: the regular one, the tiny one and the small one, known as "baby" éclair. Needless to say, baby éclairs were my favourite, aside from having the cutest name in the world, they also have the perfect size for snacking and trying different flavours. Low Sugar Coconut Brownies

Until a few years ago I had never even thought of adding vegetables to baked goods, then one day I tried a vanilla cupcake recipe that included grated zucchini and I realized how great it was: vegetables help to reduce sugar and fat content in many baked goods while maintaining the texture. For those of you out there who hate beets don't worry I do too and you can not absolutely taste them in this recipe, they are only there for texture purposes.
