Meatless Monday: Vegetable Pasties

When I lived in Australia, vegetable pasties were a favorite take-out food. We would have them with everything from a serving of fries, to a plate of vegetables or salad, or simply serve them with tomato sauce for dipping. They are one of the foods I had been missing most since moving overseas, so it encouraged me to start making them at home. The ones we have are generally individual hand-held pies, which are shaped like a half circle, however, I find this way, which looks similar to a Stromboli, to be much quicker and easier to do. The colors of spring are poking through.  In the still chilly early days of the season, a hearty soup still makes a great meal or starter.  Split Pea soup brings the green of spring to your table and is a perfect way to use any leftover ham from a holiday meal. Grilled Peanut Butter Chicken Skewers

It's grilling time! Summer is here and it's time to get some easy grilled recipes in your repertoire, like these grilled peanut butter chicken skewers. Kids will love to eat dinner from a stick with the dip-able peanut sauce to go along side it, too!
