Small Batch Pumpkin Cookie Dough Energy Bites (GF and Vegan)

  Hands on those of you who love energy balls but who don't actually need that much energy to fuel their mid-morning coffee breaks! Either because you are sitting at a desk all day (i.e. me) or because you can easily get addicted to those delicious sweet bites (i.e. also me). However, we still energy to fuel our (supposedly) intense intellectual effort, just in smaller quantities. This recipe is my go-to snack for revision time: it comes together in five minutes, it's not excessively sweet and only makes enough bites to fuel your brain correctly! Easter Chocolate Barks

  At 22 years old, I feel a bit ashamed to admit that I still receive an Easter egg from my mum, and my grandmother..and my boyfriend. Needless to say, I always find myself with too much chocolate after Easter, I usually follow two strategies (depending on how I feel): Eat ALL the chocolate in a matter of 2/3 days (telling myself I should get rid of it before starting the “after Easter diet”) Store the chocolate in some container and forget all about it (i.e. letting it go to waste) Obviously, neither of these strategies are effective and/or clever, so I thought that this year I might turn my extra eggs into chocolate barks! Apple cinnamon muffins

When it gets chilly outside and the choice of seasonal fruits at the shops gets smaller and smaller apple cinnamon muffin are a good option for your weekend baking. When I was younger muffins were my favourite thing to bake, so now whenever it's rainy and gloomy outside I fell like throwing a  batch together. These are made with spelt flour, sugar and cinnamon coated apples and not that much sugar and oil, which makes them a yummy option for your new year resolution breakfasts!
